I would say it started with the first humans trying to understand their environment.
Slightly more recent, we have evidence that the ancient Greeks developed some of the mathematics we still use today and the ancient Egyptians already had some notion of chemistry. Both were also interested in astronomy.
I think science began with the development of the human brain. We are the only species that is curious and asks questions. It is that property that makes us inherently human and because of it we ask questions about our surroundings and explore and investigate the world. So science developed alongside humans.

I think science began with the start of the big bang theory, from the moment everything was created, science was created along with it!
